Steve's first meat cut I cut a couple weeks ago (well over 6 months ago actually...) ended with a tender pork neck just starting to harden in the freezer. (And also for me this neck and shoulder was super fat - which may account for the pork-y/choppy taste.) I used a combination of hot-pressed organic cheddar in the pork. We took his old bone stock (I've lost one from cooking... it's totally in need a good cleaning; it's still very tasty)...
Served his shoulder, belly, neck (without the legs)... added butter along along with sour cream and grated the edges off! He said you really should go for meaty chops from the bones. Yum. This night is actually in celebration at home where it seems I might lose my job at 10pm that I won't see any money until about 8am! So it'll need a rest, and the bone might well be broken to a bit of rib and chicken (if needed)! :) Oh well! I just can not do a show while waiting for some chicken.... so.... how about it I have nothing of your interest here today?
